This is a reconstruction of the ancient brewing process of real Samogitian beer (Samogitia is a region in Northwestern Lithuania) as described in detail by ethnologist A. Vaitiekunas in 1935. During the brewing of this beer the mash is boiled for a good half hour at the end of steeping and only then the beer wort is lautered. This method of brewing is also known in Norway in the Telemark region and in the Trodheim area, so it is believed that such a brewing tradition may have survived even from the Viking Times. This wheat beer is also seasoned with a decoction of juniper branches, which gives it a sturdy, as if Samogitian character, so just to confirm the Samogitian origin of this beer we’ve named it after Samogitian occasional greeting - "Džion borna!" - "Mouth’s Drying!".
